Hmmm….what could these be? They’re tiny, with a rich-yet-not-too-sweet crust, and they taste like autumn.

Why, Apple Pie Cookies, of course!

Deb of Smitten Kitchen never disappoints and these are a stroke of brilliance. The recipe was a bit labor-intensive for this novice cook, and my batch came out more rustic and shabby than hers, but oh, they are delicious. Miniature pies are really what they are, and I am all about miniature edibles.

And because they’re itty-bitty, I ate one…

Good thing I gave some away to the neighbors! You should try making them too – you’ll feel like an accomplished pastry chef and they’ll look adorable no matter how messy your apple pie cookies come out. Here’s the recipe and the only change I made was to use honeycrisp apples (oh, and I forgot to sprinkle sugar on top, but they taste fantastic nonetheless).
