Whenever I catch a cold, I try to do something that doesn’t come naturally to me: rest. This involves watching episode after episode of Project Runway All Stars Season 2 (I also recently finished watching the Great British Sewing Bee – so charming!) and cutting out sewing patterns. I also try to drink lots of fluids, and eat more vegetables. And I hear citrus and vitamin C can do wonders, so I baked a lemon yogurt cake. I’m sure that counts as vitamin C, right?
I turned to Ina for the recipe, and she hit it on the mark as usual. The recipe calls for two glazes: one to soak into the cake while it’s still fresh from the oven and another to embellish and add sweetness to it, I suppose, but I prefer my cakes to be less sugary, so one glaze was perfect.
The crumb is similar to the olive oil cake I baked a few weeks ago, since this cake is made with oil as well (I used canola), but the yogurt makes it a touch heavier, though it’s still a very light cake. And like the olive oil cake, this is a super easy cake to whip up. Quick and simple recipes are the only way to go.
The tangy undertones of the yogurt and lemon work very nicely together in this cake. I like to use greek yogurt, which is thicker and creamier. I used whole milk yogurt, but because of the consistency, I think I could have gotten away with non-fat to make it healthier.
After two slices, I’m already feeling significantly better. Cold begone!

one of my favorite recipes!!! love this cake. I make it a few times a year and always scrape up the glaze from the pan and spread it on a slice. YUM.

Oh yes, I was scraping all that glaze goodness from the pan too!! The cake didn’t last long – I woke up this morning and most of it was gone (I’m not naming any names, but a certain husband may need a talking to).

Ree and Ina are my fave chefs, LOVE them! This cake looks yummy and yes, I think it counts for your vitamin C. *wink* I’m into watching Dr. Who (the newer series) at the moment. The girls are crazy over this show and I think K might dig it.

This would be a perfect father’s day cake, Lucinda! M mentioned that it almost tastes like lemon poundcake, but the nice thing is that it’s so much less caloric!
