Coconut Bread

When I made the granola last week, I ended up with a lot of extra shredded coconut. I tossed the bag into the fridge and yesterday morning, as I was rummaging for something that wasn’t cheddar bunnies to put in K’s lunch, I paused at the sight of so much coconut.

I powered up my ipad and skimmed through my go-to cooking site (where the granola recipe originated as well), and voila, three posts in, a recipe for coconut bread! And I conveniently had all the ingredients in the house. It felt like kismet.

I whipped it up and an hour and fifteen minutes later, I had an aromatic, golden loaf. I couldn’t wait for it to cool off completely and sliced right into it, releasing steamy puffs of fresh-baked goodness.

Delicious. I brewed up my afternoon latte, plunked a couple of pats of butter on the slices and thoroughly enjoyed my snack.

I do have to mention that if you’re not a coconut lover, this is not for you. It’s a rich-but-not-too-heavy cake-y bread with minimal sweetness, and the coconut flavor really shines.

The only changes I made were to replace part of the sugar with a 1/4 cup of dark brown sugar and reduced the cinnamon to 1 tsp. It’s perfect. Recipe is here.

    My favorite cooking site too! I saw that, and wanted to make it but we’re still trying to clear our last batch of Deb’s buttermilk berry bundt from the fridge πŸ™‚

    You know, I think this is actually not a bread at all — there’s no kneading, no proofing and punching down, no shaping, and most of all, no yeast! I believe that there is a cake. But SHHHH — tell no one — I am going to try to pass it off as a loaf of bread, that sounds somehow healthier, haha.

    (Aha, Deb beat me to it!: “It was one of those loaves we confusingly call β€œbread” β€” like banana or any other quick bread β€” but are actually cake”)

    Either way, gosh it looks so good! I love coconut, tastes like sunshine…

      Deb is the best! The buttermilk berry bundt is definitely on my to-do list. And you’re right, I should put quotes around the word bread πŸ™‚

    It looks delicious (esp. with the butter on it!), but alas, not being a coconut lover, it will be one recipe to forgo. Glad you could enjoy a yummy afternoon snack along with your latte:)

      Coconut is definitely not for everyone – it’s actually not until recently that I started to really love it, Lucinda πŸ™‚

    We’ve made this loaf three times recently! We love it. I keep wondering if I could add banana to it without messing up the consistency.

I just realized that this week marks 10 years sinc I just realized that this week marks 10 years since my first craft book Sewing Happiness was published. I’ve sewn literally thousands of garments and other textile projects in the last decade! I included a Sashiko primer in the book, and I’m delighted that this humble Japanese embroidery practice has stood the test of time - if anything, I’ve noticed that there’s an ever growing enthusiasm for hand stitching.
