Tofu Chocolate Pudding
This pudding required two ingredients. Two. And no cooking! Possibly the easiest dessert ever, and it's delicious to boot. K ate a whole bowlful and didn't even realize it was made with tofu. Not that she has any objection to soy products, but the point is that you would never know. If I hadn't made it, I wouldn't know. Quinoa Salad
This past weekend I had a rare girl's night out and had an opportunity to sample the amazing food at Poppy, where they serve all their meals in "thali" form. Gluten-free Cupcake-Off
For one of my friend's birthday, I made some cupcakes this weekend. She recently overhauled her diet to eliminate gluten, soy, dairy and refined sugar and it was a cooking challenge I gladly took on.
