After making the pseudo-healthy chocolate chip cookies, I've been wondering what to do with the leftover almond flour. Then I saw this recipe via Cup of Jo, and I had my answer. I've noticed that more and more lately, I like to pin unconventional dishes to my "Yummies" board. I see cauliflower tortillas and my interest is piqued. Or pasta with burrata and kale-roasted garlic sauce - I have no idea what burrata is, but I really want to make this. Fruit Smoothie

As a die-hard coffee drinker, sometimes I don't get quite enough of the other kinds of healthier liquids into my system. To remedy that, I've been making smoothies lately. I toss in whatever I have on hand - for this particular one, I used strawberries, frozen peaches, frozen blueberries, a banana, and a generous splash of coconut milk. Coconut Bread

When I made the granola last week, I ended up with a lot of extra shredded coconut. I tossed the bag into the fridge and yesterday morning, as I was rummaging for something that wasn't cheddar bunnies to put in K's lunch, I paused at the sight of so much coconut.
