Then I saw this <a href=\"http:\/\/joannagoddard.blogspot.com\/2013\/05\/the-best-olive-oil-cake-youll-ever-have.html\" target=\"_blank\">recipe<\/a> via <a href=\"http:\/\/joannagoddard.blogspot.com\/\" target=\"_blank\">Cup of Jo<\/a>, and I had my answer.<\/p>\n<p><a href=\"http:\/\/sanaeishida.com\/wp-content\/uploads\/2013\/05\/olive-oil-cake2.jpg\"><img decoding=\"async\" class=\"alignleft size-full wp-image-4203\" title=\"olive-oil-cake2\" src=\"http:\/\/sanaeishida.com\/wp-content\/uploads\/2013\/05\/olive-oil-cake2.jpg\" alt=\"\" width=\"800\" height=\"632\" srcset=\"https:\/\/sanaeishida.com\/wp-content\/uploads\/2013\/05\/olive-oil-cake2.jpg 800w, https:\/\/sanaeishida.com\/wp-content\/uploads\/2013\/05\/olive-oil-cake2-300x237.jpg 300w\" sizes=\"(max-width: 800px) 100vw, 800px\" \/><\/a><\/p>\n<p>I&#8217;d never tried olive oil cake before, have you? It&#8217;s <em>very<\/em> interesting. I used meyer lemons as suggested and even with half a cup of the juice, the taste is very subtle &#8211; complex, even.<\/p>\n<p><a href=\"http:\/\/sanaeishida.com\/wp-content\/uploads\/2013\/05\/olive-oil-cake3.jpg\"><img decoding=\"async\" class=\"alignleft size-full wp-image-4204\" title=\"olive-oil-cake3\" src=\"http:\/\/sanaeishida.com\/wp-content\/uploads\/2013\/05\/olive-oil-cake3.jpg\" alt=\"\" width=\"800\" height=\"560\" srcset=\"https:\/\/sanaeishida.com\/wp-content\/uploads\/2013\/05\/olive-oil-cake3.jpg 800w, https:\/\/sanaeishida.com\/wp-content\/uploads\/2013\/05\/olive-oil-cake3-300x210.jpg 300w\" sizes=\"(max-width: 800px) 100vw, 800px\" \/><\/a><\/p>\n<p>I think I may have used an olive oil that wasn&#8217;t mild enough though. When I took the first bite, I paused, thinking &#8220;whoa, that&#8217;s a little weird.&#8221; The olive oil flavor really sings in this cake &#8212; in fact, it howls raucously. However, by the third bite, I was hooked. It also complements coffee very nicely.<\/p>\n<p><a href=\"http:\/\/sanaeishida.com\/wp-content\/uploads\/2013\/05\/olive-oil-cake4.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignleft size-full wp-image-4205\" title=\"olive-oil-cake4\" src=\"http:\/\/sanaeishida.com\/wp-content\/uploads\/2013\/05\/olive-oil-cake4.jpg\" alt=\"\" width=\"800\" height=\"533\" srcset=\"https:\/\/sanaeishida.com\/wp-content\/uploads\/2013\/05\/olive-oil-cake4.jpg 800w, https:\/\/sanaeishida.com\/wp-content\/uploads\/2013\/05\/olive-oil-cake4-300x199.jpg 300w\" sizes=\"(max-width: 800px) 100vw, 800px\" \/><\/a><\/p>\n<p>I used the basic olive oil from Trader Joe&#8217;s and it probably doesn&#8217;t qualify as &#8220;good quality&#8221; as specified in the recipe. The crispy, crunchy crust is my favorite part. <em>So good<\/em>. Bonus: it&#8217;s super easy to make. You basically toss in all the ingredients into a bowl and mix. No creaming of butters, no sauteeing or toasting of exotic spices, no need for an electric mixer. Definitely my kind of recipe.<\/p>\n<p>I&#8217;ll try it again for sure, but might make the extra effort to get less pungent olive oil. As I contemplate that, I think I&#8217;ll go cut myself another slice.
