I tossed the bag into the fridge and yesterday morning, as I was rummaging for something that wasn&#8217;t cheddar bunnies to put in K&#8217;s lunch, I paused at the sight of <em>so<\/em> much coconut.<\/p>\n<p><a href=\"http:\/\/sanaeishida.com\/wp-content\/uploads\/2013\/04\/coconut-bread2.jpg\"><img decoding=\"async\" class=\"alignleft size-full wp-image-3218\" title=\"coconut-bread2\" src=\"http:\/\/sanaeishida.com\/wp-content\/uploads\/2013\/04\/coconut-bread2.jpg\" alt=\"\" width=\"800\" height=\"533\" srcset=\"https:\/\/sanaeishida.com\/wp-content\/uploads\/2013\/04\/coconut-bread2.jpg 800w, https:\/\/sanaeishida.com\/wp-content\/uploads\/2013\/04\/coconut-bread2-300x199.jpg 300w\" sizes=\"(max-width: 800px) 100vw, 800px\" \/><\/a><\/p>\n<p>I powered up my ipad and skimmed through my <a href=\"http:\/\/smittenkitchen.com\" target=\"_blank\">go-to cooking site<\/a> (where the granola recipe originated as well), and voila, three posts in, a <a href=\"http:\/\/smittenkitchen.com\/blog\/2013\/03\/coconut-bread\/\" target=\"_blank\">recipe<\/a> for coconut bread! <em>And<\/em> I conveniently had all the ingredients in the house. It&#8217;s a rich-but-not-too-heavy cake-y bread with minimal sweetness, and the coconut flavor really shines.<\/p>\n<p>The only changes I made were to replace part of the sugar with a 1\/4 cup of dark brown sugar and reduced the cinnamon to 1 tsp.
